PLAIN SIGHT
Bootleg Baking is a sweet, occasionally savory, prohibition-style bakery hiding in plain sight around Broomfield, Colorado.
You usually have to know someone who knows someone to find us. Maybe one of our bootleggers drops a run on your doorstep. Maybe you catch us in the back of a brewery or distillery. Maybe you meet us on some “shady” corner nearby and walk away with a box of fresh contraband.
Founded by Nicole Herrington, Bootleg Baking opened its doors in sleepy little Broomfield and quietly built a loyal fanbase by doing things the old-fashioned way: small batches, bold flavors, limited releases, and just enough mischief to keep everyone looking over their shoulder.

Hard to Find
We have very little regard for the legitimacy of typical business operations, predictable schedules, or overly polished bakery behavior.
Limited by Design
Sometimes we inspire angry emails demanding more croissants. As Mick said, you cannot always get what you want.
Brazen on Purpose
We playfully reference the “legality” of the whole operation, but relax. We are legal. So legal.
We follow local and national health recommendations. The only thing suspicious here is how fast the pastries disappear.
